I’ve been cutting down on grains in the last 2 weeks (due to tummy issues, sorry for the TMI) and sometimes it’s hard to decide what to eat. I used to eat grains every day and probably too much of it: bread with almost everything, oatmeal and muesli for breakfast, rice, noodles…
I’ve whipped up this bowl last weekend for brunch and we loved it so much.
- Oven-roasted potatoes:ย 600 grams of potatoes. Peel, cut, arrange on oven pan, drizzle with olive oil and add salt and pepper. Roast for 25 minutes in the oven.
- Guacamole: Mix twoย avocados and one clove of garlic in a blender. Mix with one small diced onion, a handful of cut cherry tomatoes and lime juice.
- Fresh salad: chop a small romaine lettuce and cut a handful of cherry tomatoes in half. Mix with olive oil and white wine vinegar.
- Scrambled eggs with onions and champignons: scramble 5 eggs with 5 champignons cut in quarters and one small diced onion.
Arrange the fresh salad on the plate, add the scrambled eggs, top with roasted potatoes and guacamole. Enjoy! ๐
